Coastal Dishes Chef

Nexus Staffing Solutions Limited is urgently recruiting on behalf of its client, a restaurant based in Umoja, Nairobi, for an experienced, skilled and passionate Coastal Dishes Chef with strong practical knowledge of authentic Swahili and coastal cuisine.


We are specifically looking for a chef who can independently prepare a variety of traditional coastal dishes while maintaining authentic flavours, consistent quality, proper presentation and efficient kitchen operations.


Applicants residing in Umoja and neighbouring estates will have an added advantage due to the location of the workplace.


Key Responsibilities




• Prepare authentic Swahili and coastal dishes while maintaining traditional flavours and quality standards.


• Independently prepare popular coastal meals, including pilau, biryani, viazi karai, bhajia, mahamri, chapati and coconut-based dishes.


• Plan and organise daily food preparation according to the restaurant\'s menu and customer demand.


• Ensure consistency in taste, food quality, portion sizes and presentation.


• Demonstrate proper knowledge and use of coastal spices, ingredients and traditional cooking techniques.


• Maintain high standards of kitchen hygiene, cleanliness and food safety.


• Monitor food stock, ingredient usage and proper storage.


• Minimise food wastage while maintaining cost efficiency.


• Coordinate with other kitchen staff to ensure timely preparation and service of orders.


• Maintain proper organisation of kitchen equipment, utensils and workstations.


• Contribute to menu development and recommend additional coastal specialities.



Minimum Requirements




• Proven experience working as a Chef or Cook in a restaurant, preferably specialising in Swahili or coastal cuisine.


• Strong practical experience preparing authentic coastal and Swahili dishes is essential.


• Ability to independently prepare a variety of coastal meals without constant supervision.


• Good understanding of traditional coastal spices, ingredients and cooking methods.


• Ability to maintain consistent food quality and taste, even during busy service periods.


• Knowledge of food hygiene, sanitation and safe food-handling practices.


• Good kitchen organisation and time-management skills.


• Reliability, discipline, teamwork and a positive attitude.



Added Advantage:




• Relevant culinary training or professional certification.


• Experience working in a coastal cuisine restaurant.


• Residence in Umoja or surrounding areas.
